    1. Yes! I made a half recipe. I figured 3 egg whites would be fine, though I sort of tried to 2.5 it. Then I got flustered and still added 3 egg yolks to the base. All worked just fine! Super forgiving and quite fabulous results–I was expecting a soufflé disaster. Even the kid ate it all.
