The very black top of the cheesecake was a bit frightening. I really enjoyed (and was surprised by) the soufflé-like texture of the cake. Make sure you use a tall pan!
same. halfway through baking I was a bit alarmed at the aromas from the oven, but soldiered on and it was fab!
