I also had problems with the aioli. I think Lebovitz left out “OR,” meaning 1 cup of olive oil OR one cup of vegetable oil. He often does that with salad dressing recipes. Lebovitz has several typos and errors in this book but I’ve never had a problem with ingredients. I googled the recipe and nothing has been posted regarding a mistake. ?????
I think you’re right that it’s a mistake. When I saw that everyone has been having trouble, I looked back at the recipe I usually make. I use 1 whole egg with 1 cup of oil. That might explain why it didn’t work with just 1 yolk.
