I made this yesterday, but haven’t finished it off yet (i.e. with heavy cream, bacon, etc.). There is a part of me that wonders if the cream is necessary? (I guess it wouldn’t be a chowder at that point, but would still be a tasty soup nonetheless).
There were no leeks to be found in my neck of the woods this weekend, so I substituted a head of fennel. Fingers crossed, but so far so good.
Cher, I am finishing it off with the heavy cream and off-setting those calories with giving my supper guests the option of yogurt or sour cream (that works, right???) Can I make this Monday night (tonight) and let it sit in the fridge (wo cream) until Wednesday night. (Dorie says one day).
Made this at least three ways so far! With leeks, zucchini, and with pumpkin. One of hubby’s favorite soups.

I used plain Greek yoghurt but wished I’d used cream. It was VERY good but I think the cream would make it better 🙂
